Shred a green or red cabbage, 2 carrots, an apple and half an onion and mix together in a bowl.
Separately, mix together 200ml of Natural Umber apple cider vinegar, a teaspoon of wholegrain mustard, sea salt and black pepper, with two tablespoons of mayonnaise.
Mix both together with your hands and serve with chopped flat leaf parsley on top. Delicious and so healthy! The ACV will cut through the onion and leave a deliciously sweet flavour.
You can experiment with other flavours, try adding; pomegranate seeds, sesame seeds, pumpkin seeds, spring onions or fresh coriander.
