Pickled Red Onion

A sweet and simple one to try that will add a kick to any dish!

  • 2 Red Onions
  • 250ml Natural Umber
  • 2-3 tbsp Water
  • Salt & Pepper
  • 1-2 Bay Leaves

Optionally, you could add garlic cloves, whole peppercorns, mustard seed, a sprig of thyme, and many other herbs or spices to this recipe.

Thinly slice the red onion. (A mandoline is useful here.)

Add all of the dry ingredients to a clean jar and fill with the liquid. Give the jar a slight shake or stir to ensure even coverage of the ingredients.

Store out of sunlight for 2-3 hours and you’re finished!

Try adding to salads, sandwiches, tacos, cold meats and more! It also makes a super tasty addition to the table during BBQ season.

Keeps in the fridge for up to 1 month.
